Greetings from Chef Jacques |
|
April was a special month for us since we celebrated L’Auberge Chez François’ 40th anniversary. I want to thank everyone who came to one of our special anniversary events in April. It was wonderful for me to see so many of our long-time patrons and friends. We were especially honored to have a few guests attend our anniversary celebration who also dined with us on our very first night in April of 1976.
Almost all the herbs used at the restaurant will come directly from our gardens. We’ll be growing basil, chervil, shiso, thyme and mint, to name a few. I’ll be adding our fresh herbs to salads and, of course, flavoring our sauces and main dishes with them. And, I’ll be faced with the very exciting task of working with our head sommelier to come up with ways to use our fresh herbs in our signature cocktails. Please come by to take a tour of the gardens and enjoy an herbaceous cocktail on the terrace.
Don’t forget the gift of good food and wine for birthdays, graduations, and anniversaries. We have a full calendar of cooking demonstrations and wine dinners scheduled for this spring and summer.

“Homage to Catalonia” Wine Dinner |
|
Please join us on Thursday, June 2nd at 6:30pm for the second in our series of wine dinners focusing on importers and their portfolios. When considering a bottle by an unfamiliar producer, the name of a reliable importer on the back label is one of the best clues to the quality of the wine. Since 1990, Eric Solomon’s European Cellars has specialized in wines from southern France and Spain, championing young, innovative winemakers and helping to bring lesser-known regions into the mainstream of the American market. The wines selected for this dinner all come from the region of Catalonia in eastern Spain, near Barcelona. |

The Romantic Rhine with Chef Jacques Haeringer |
|
We are excited to announce the next chapter in river boat cruising with Chef Jacques beginning on September 20, 2017! The voyage will begin in Amsterdam and then travel through the Dutch countryside to Germany. We will end the cruise in Papa’s beloved Alsace. Chef Jacques will host several special events, including a dinner at one of his favorite restaurants in Strasbourg, the capital of Alsace. We hope you will consider sailing with us, for new adventures along the Rhine, mais oui, but of course, with good friends, great meals and sipping vino along the way! |

Team Member of the Month |
|
Baltazar Lopez started working at L’Auberge Chez François on May 3, 1999. He is a daytime sous chef and also assists in checking in the daily produce, seafood and other restaurant inventory. If you’ve ever been to a private party or event with us, chances are Baltazar helped to make the house hors d’oeuvres. We can always count on him to be reliable and pitch in whenever we need it. Thank you, Baltazar, for your years of service and dedication! |
