Spring officially arrives on Tuesday, March 20! We’re conditioning the soil of our two
on-site gardens with organic compost and coffee grounds in anticipation of
spring planting. I can’t wait to get my hands dirty again in the gardens! I have been happily leafing through the various organic seed catalogs, calculating how much to purchase to ensure a bountiful harvest for our guests. We have already started to harvest spinach
and sorrel from the garden. Spring also brings morel mushrooms,
asparagus, lettuces and greens; all of which inspire our team to create the
most healthful and flavorful dishes. Bon appétit!Looking ahead to April, L’Auberge Chez François is
celebrating our 42nd Anniversary in Great Falls, Virginia. Forty two years ago, my Papa
closed Chez François in Washington D.C. and moved his restaurant to the Virginia “countryside”, hence the name L’Auberge Chez François! We have two special
events planned to celebrate this milestone, including our “Celebrating the
Classics” cooking demonstration and luncheon and a festive anniversary dinner featuring the wines of France.
April also brings us the
amazing musical talents of Prince Havely and Efi Tovi, returning for three
exceptional musical events after a sold out performance in March. Prince and Efi will be performing all your
favorite show tunes for two musical brunches, and a Friday Night Musique et Cuisine experience featuring the songs
of Cole Porter, Rogers and Hart, Fat Waller and Duke Ellington. I am also thrilled to host one of
Alsace, France’s most prestigious vineyards and highly rated wines at Chef Jacques’
