Greetings from Chef Jacques
 
We’re very happy to be introducing our new Brasserie Brunch that will be served at Jacques’ Brasserie on Saturdays beginning at 11:30am and Sundays starting at noon. Our Brunch includes Sauders’ Lancaster Organic Farm Fresh Omelettes, Jacques’ Alsatian Tarte Flambées Benedict, and our version of Crêpes Suzette. We take reservations for brunch, as well as walk-ins, and the regular Brasserie menu options will also be available. Don’t forget our Brasserie Brunch “Pick me Ups” including our Chez Francois tasty Mimosa, L’Aperitif du Patron, and a nice glass of Cremant d’Alsace! We hope you’ll come in to sample an Alsatian-style brunch one weekend soon. 

The onsite organic gardens are flourishing this month. Papa always loved gardening, but thought that vegetable gardens required too much work. We are proud to say, we now have three gardens planted with herbs such as French tarragon, basil, sage, parsley and par-cel, which looks like parsley and tastes like celery. I love it in our salads. Other vegetables popping up are the zucchinis, cucumbers, squashes, and peppers. The haricots verts are growing and in full abundance! The vegetables rotate and we replant every few weeks so the harvest lasts longer. You’ll find these vegetables in our new crudité garden salad or as an accompaniment to your entree. Coming soon are a variety of tomatoes, which we use for our house-made Bloody Marys, gazpacho, and salads. We always pride ourselves in bringing produce directly from our garden to your plate. Happy gardening – here’s to healthy and tasty eating!

Pearmund Cellars Winemaker’s Dinner
 
Please join us Thursday, August 11th at 6:30pm as L’Auberge Chez François welcomes Chris Pearmund, Owner and Executive Winemaker at Pearmund Cellars in Fauquier County. Chris is one of the leading winemakers in Northern Virginia, consulting and making wine at numerous wineries around the commonwealth and several other states, as well as Pearmund. First planted in 1976, the former Meriweather Vineyards property was purchased in 1993, and boasts fifteen acres under vine, as well as a geothermal winery. Grapes are sourced from a number of other sites in Virginia, allowing Pearmund to produce a few thousand cases a year of fine, artisanal wine from a number of grape varieties. We will pair these fine wines with a special Chef Jacques’ Menu Degustation for this evening’s wine event.

Musique et Cuisine featuring Jeff Severson, Fingerstyle Guitar
 
Join us on Friday, August 19th at 7:00pm while we continue the Musique et Cuisine series featuring the talented Jeff Severson, who will entertain us with his fingerstyle guitar. Jeff has quite a history of musical greatness, including being inducted into the Kansas Music Hall of Fame 2009 and South Dakota R&R Hall of Fame 2015. He has also appeared as guest soloist with the band America at the Birchmere, Alexandria and opened for Nils Lofgren/Skunk Baxter at the Hard Rock Café Washington. Jeff has recorded eleven CDs of mostly original fingerstyle guitar compositions and been nominated for Producer of the Year by WAMA, Washington Area Music Awards. This wonderful evening of music and L’Auberge Chez François cuisine and sommelier wine pairings is not to be missed!

Garden to Table Cooking Demonstration and Luncheon
 
Please join us on Saturday, August 27th at 11:00am and enjoy a special Garden to Table cooking demonstration and luncheon. Chef Jacques and Stephanie, our lead gardener, are very proud of our two on-site gardens. They are happy to suggest nutritionally superior food to make for delightful cuisine at this afternoon’s demo and luncheon and on all of our daily offerings. Come celebrate our August Garden Bounty at L’Auberge Chez François!

Bravo Pascal! Since 2000, Pascal Perrochon, Chef de Cuisine, has lead our team of over forty sous chef, line chefs, prep chefs, dessert chefs, and more at L’Auberge Chez François. He oversees all kitchen operations, quality assurance, and procurement. Under Pascal’s watchful eye, we continue to produce award winning cuisine.
