Greetings from Chef Jacques
Spring officially arrives on Tuesday, March 20! We’re conditioning the soil of our two
on-site gardens with organic compost and coffee grounds in anticipation of
spring planting. I can’t wait to get my hands dirty again in the gardens! I have been happily leafing through the various organic seed catalogs, calculating how much to purchase to ensure a bountiful harvest for our guests. We have already started to harvest spinach
and sorrel from the garden. Spring also brings morel mushrooms,
asparagus, lettuces and greens; all of which inspire our team to create the
most healthful and flavorful dishes. Bon appétit!Looking ahead to April, L’Auberge Chez François is
celebrating our 42nd Anniversary in Great Falls, Virginia. Forty two years ago, my Papa
closed Chez François in Washington D.C. and moved his restaurant to the Virginia “countryside”, hence the name L’Auberge Chez François! We have two special
events planned to celebrate this milestone, including our “Celebrating the
Classics” cooking demonstration and luncheon and a festive anniversary dinner featuring the wines of France.

April also brings us the
amazing musical talents of Prince Havely and Efi Tovi, returning for three
exceptional musical events after a sold out performance in March. Prince and Efi will be performing all your
favorite show tunes for two musical brunches, and a Friday Night Musique et Cuisine experience featuring the songs
of Cole Porter, Rogers and Hart, Fat Waller and Duke Ellington. I am also thrilled to host one of
Alsace, France’s most prestigious vineyards and highly rated wines at Chef Jacques’
Table featuring the wines of Domaine Weinbach. You may view all of our upcoming events here.

42nd Anniversary Celebration Cooking Demonstration and Luncheon
Please join us on Saturday, April 7 at 11:00am for our 42nd Anniversary in Great Falls special event on with a classic cooking demonstration and luncheon. This celebratory event promises to be chockful of anecdotes, history and lore of Papa and Mama’s move to the “country” to open their dream “L’Auberge” on April 20th, 1976. Greetings from Chef Jacques
Love is in the air! In addition to being awarded the 100 Best Restaurants in America, L’Auberge Chez François was named one of the 100 Most Romantic Restaurants in America by OpenTable diners. We are honored to be awarded this distinction for yet another year. A special thank you to all our customers for celebrating Valentine’s Day with us over the years.

Keep an eye out for the new menu at Jacques’ Brasserie in March. We will be
adding several new dishes, including some new vegan menu options.

We have a full schedule of festive special events for March, including a dinner
featuring the wines of Buena Vista Winery from California with special guest, The Count of Buena Vista – Agoston Haraszth. Later in the month, we will be partnering with Virginia’s Williamsburg Winery for a sumptuous wine dinner in our Virginia’s Best series. We have three musical brunches scheduled as well as our ever popular Wine Festival and Luncheon. Back by popular demand, will be welcoming back local singer and songwriter Shane Gamble at our Musique et Cuisine dinner. We hope to see you there.

Musical Brunch with Guitarist Alexander Barnett
Please join us on Sunday, March 4 at 11:00am for our popular musical brunch series. Local guitarist and composer Alexander Barnett will be performing a broad range of music from classical, modern and jazz. Since his first appearance at L’Auberge Chez François, Alex has been captivating our guests on a regular basis with sold-out events and performances. Buena Vista Wine Dinner with The Count of Buena Vista
We are proud to announce a very special wine dinner on Thursday, March 8 at 6:30pm as we welcome Buena Vista Winery. Founded in 1857, it is California’s first premium winery with a fascinating history. Today, the legend is being re-born under the vision of Jean-Charles Boisset. The Count of Buena Vista will be in presence, portrayed by Sonoma professional character actor and historian George Webber, whom has brought the famous founder to life. Mr. Webber will combine his historical and wine knowledge with extraordinary oratory and song. You won’t want to miss this one of a kind dinner!

DC Brau Cooking Demonstration and Luncheon
Look no further, we’ve found the pot of gold! Join us on Saturday, March 17 at 11:00am when we will be featuring local brewery, DC Brau Brewing Company. Founded in 2009 by Brandon Skall and Jeff Hancock, it is the first brewery to operate inside the District of Columbia since 1956. Chef Jacques will be demonstrating how to prepare a four-course menu, followed by a luncheon with DC Brau beer pairings. Musical Brunch featuring Jarrett Laskey
We will be featuring another installment in our musical brunch series on Sunday, March 18 at 11:00. Guitarist Jarrett Laskey will be returning to perform his collection of classical and contemporary music songs. Dine on Chef Jacques’ specially created four-course menu with house-made croissant and brunch cocktails such as Cremant d’Alsace,Bloody Marys, and mimosas cocktails. Williamsburg Winery Wine Dinner
Please join us Thursday, March 22 at 6:30pm for the next in our series of Virginia’s Best wine dinners, featuring Williamsburg Winery. Founded in 1985 by Patrick and Peggy Duffeler, the winery is located on a 320 acre plot of land known as the Wessex Hundred, 275 acres of which are dedicated to the Williamsburg Conservancy and are intended to remain permanently undeveloped. Winemaker Matthew Meyer took a double degree  in Oenology and Viticulture at UC Davis, and worked at Grgich Hills and Heitz in Napa Valley before coming to Virginia. He produces a wide range of wines, including the Gabriel Archer Reserve, and the Adagio, which won the Virginia Winery Association’s Governor’s Cup in 2014. We look forward to welcoming Matthew to L’Auberge Chez François.

Wine Festival and Luncheon
Our Wine Festival and Luncheon returns on Saturday, March 24, 2018. Please join us as we sample twelve wines from California, New Zealand, Germany, Portugal, and of course, France. Arrive any time between 11:30 and 1:00pm for a walk-around tasting of these fine wines paired with Chef Jacques’ seasonal canapés. Our sommeliers will be on-hand to guide you through the tasting and answer questions. Following the tasting, sit down and enjoy a complete luncheon of your choice from our four-course menu, paired with another glass of wine.

You are in luck this March! Our guests’ favorite classical guitarist Alexander Barnett will be entertaining you for the second time this month on Sunday, March 25 at 11:00am. We are thrilled to be welcoming back local singer and songwriter Shane Gamble on Friday, March 30 at 7:00pm. With his guitar and loop station, Shane plays an acoustic set effortlessly balancing a mixture of Country, Rock and Americana music. In addition to playing popular hits, Shane will showcase some of his original songs such as “Turn My Way” and “Tangled in You”. Please join us for an evening of decadent food and live music!

Greetings from Chef Jacques
Happy new year to all!

I want to personally thank all of our
customers for making 2017 such a great year for our little slice of Alsace here in
Virginia. We were thrilled to be named one of OpenTable’s Best Restaurants in
America for 2017 for the fifth year in a row, among a number of other accolades
for the year.

In 2017, we also
increased the size of our on-site vegetable gardens to bring more produce right
from the garden to your plate and offered more wine tastings, Chef’s Table dinners, and special events than ever before. And, most importantly, the
brasserie burger (with foie gras as an option) is now on the menu every day of the week at Jacques’ Brasserie.

February equals romance at L’Auberge Chez François. We have a full month of romantic special
events, including two cooking demonstrations and luncheons, two musical brunches, wine dinners, and a special Valentine’s Eve Champagne dinner! We hope to see you and your valentine at one of these events.

Please join us on Sunday, February 4 at 11:00am before the big game and kick off your day with a Super Bowl Musical Brunch featuring the beautiful sounds of guitarist Jarrett Laskey. Back by popular demand, Jarrett is a professionally trained classical guitarist performing a repertoire of Spanish/Latin guitar music, standard classical and contemporary songs. PlumpJack Estates Wine Dinner
We hope to see you on Tuesday, February 6 at 6:30pm for our PlumpJack Estate wine dinner. After opening two successful estate wineries in Napa Valley, PlumpJack Estate in Oakville in 1995 and CADE Estate on Howell Mountain in 2005, the partners have created the impressive Odette Estate nestled in the palisades of the Stags Leap District. Scott Gaffney, Eastern Regional Sales Manager, will guide us through wine pairings that showcase the nuances of all three Estate properties. These properties, from three of the most prestigious appellations within Napa Valley, offer contrasting but extraordinary expressions of Cabernet Sauvignon.

Carnivore Lovers Cooking Demonstration and Luncheon
Cupid is planning early! Please join Chef Jacques on Friday, February 9 at 11:00am for the popular Carnivore Lovers’ Valentine’s cooking demonstration and luncheon. Preparing a repast for your special someone is an act of love! Our carnivorous menu features a Gruyère cheese quiche Lorraine with smoked bacon and Virginia ham; our classic Beef Wellington with foie gras, and rich truffle sauce adds to that intangible “good feeling” for you and your lover. It wouldn’t be a proper celebratory Valentine’s Day without chocolate, so Chef Jacques is featuring a Valrhona Chocolate Truffle Soufflé. Oh la la!

Raymond Oliver, author of Gastronomy of France said, “The reason that bouillabaisse has a world reputation is because it is an aphrodisiac”. The Bounty of Sonoma Wine Dinner
Please join Chef Jacques and the team on Tuesday, February 27 at 6:30pm for The Bounty of Sonoma Wine Dinner as we feature the wines of Stonestreet Estate, Hartford and Matanzas Creek. We welcome proprietors Christopher and Ariel Jackson as they take us on a tour of the best growing regions in Sonoma, California. Stonestreet is one of the most expansive mountain vineyards in the world. The winery is proud to act as stewards of the land, caring for a 5,500 acre estate that overlooks the Alexander Valley in the Mayacamas Mountain Range. Bon appétit and cheers!

Holiday Greetings from Chef Jacques
We want to wish everyone Happy Holidays from all the staff at L’Auberge Chez François and Jacques’ Brasserie. Every year at this time we are gratified to see so many of our regular customers who celebrate the holidays with us year after year. Thank you for making us part of your holiday traditions.

This was again a momentous year for us at L’Auberge Chez François and we have our loyal customers to thank for our ongoing success. We celebrated forty one years in Great Falls, Virginia and sixty-three total years in the Washington DC and metropolitan area.

Holiday celebrations came early for us this year as we were awarded OpenTable’s Best Restaurants in America for 2017, for the fifth year in a row, based on 12 million diner reviews of over 25,000 restaurants. L’Auberge Chez François and Jacques’ Brasserie were awarded in several categories of Open Table’s Diner’s Choice Awards. We were thrilled to have received an “Extraordinary to Perfect” rating by Zagat in 2017, a Certificate of Excellence from Trip Advisor, Washingtonian Top 100 Restaurants and Northern Virginia Magazine’s 50 Best Restaurants. Merci beaucoup, we are truly humbled and honored.

A Chef’s Christmas Poem by Jacques Haeringer

T’was the night before Christmas, and all through the kitchen
Chefs scurried about while groaning and bitchin’.
The sauces were simmering and seasoned with care,
Because soon the reveling hordes all would be there.
The tables were set, and not a moment too soon;
Both waiters and hosts looked ready to swoon.
Will we ever be ready? It’s so hard to tell;
Our chances are as good as a snowball in hell.
The pressure was on. The geese were a-roasting,
As partiers began all their holiday toasting.
With bags full of presents, dressed in festive apparel.
Our guests made such a racket that drowned out the carols.
In the kitchen waiters shouted, while cooks swore through their teeth.
The scene was pure bedlam, not a moment of peace.
The chef, he bellowed, to the cooks on the line,
“Move your derrières, make those plates look sublime.”
“I want everything hot, let us make haste,
Move onward you cooks, there’s no time to waste.”
The chef looked about, then said with a shrug,
“To all a good supper and a hearty bah humbug!”

Virginia’s Best Wine Dinner featuring Barboursville Vineyards
Please join us Thursday, January 25th at 6:30pm as we welcome Jason Tesauro, Chief Sommelier at Barboursville Vineyards, for the next in our series of Virginia’s Best wine dinners. Established by the Zonin family of Italy in 1976, Barboursville has been one of pioneers of truly fine wine in Virginia, garnering numerous accolades and awards, and winning the Governor’s Cup several times. Estaban Murcia has been working at L’Auberge Chez François since September 2005. Over the past twelve years, Esteban has learned almost all aspects of the restaurant. He started working in the kitchen and then became a bus boy. On some days he is a line cook and works the grill station. On other days he is a bus boy, and some days he works both! He is a hard worker and and is always dedicated to providing a helping hand to everyone he can. We congratulate Esteban and thank him for all of his years of service!

We’re excited for the holidays here at L’Auberge Chez Franҫois and Jacques’ Brasserie. In fact, the holiday season was our founder François Haeringer’s most favorite time of the year, as you can tell by our extraordinary display of holiday decorations throughout the dining rooms
and grounds. Most of our lights and decorations, as per Papa’s tradition, will be turned on Thanksgiving evening and will remain on until the new year.Not to be missed, we have some of our most popular and decadent special events on the schedule for the coming month. Our annual holiday sing along with our local favorites, the Difficult Run String Band, “Holiday in Paris” and “Champagne Celebration” cooking
demonstrations and luncheons, a sumptuous Champagne and Bordeaux Wine Dinner, a Holiday Wine Festival, and a Sounds of the Season Brunch with guitarist Alexander Barnett.It’s a great time to think about the perfect gift for that special someone in your life. Greetings from Chef Jacques
We’ve just returned from our 2017 Rhine River Cruise from Amsterdam to Basel and the trip was a terrific success. Many thanks to the 120 patrons who joined us for the sold-out trip. It was a pleasure traveling with all of you to some of the great culinary destinations of the world. For those who didn’t make this year’s trip, stay tuned at laubergechezfrancois.com for the next trip and all of our special events.

There’s plenty going on right here at home too. Our upcoming events include an entertaining night of rock and roll with Steve Lauri of the famed band The Hollies, French artisanal cheese cooking demonstration and luncheon with cheese monger Karen Dee, a musical brunch with pianist extraordinaire Wade Beach, and our always popular Wine Festival and Luncheon.

Did I mention we still have of greens, haricots verts, cabbages, peppers, and other produce coming in from the garden? You’ll find our garden produce featured on the regular menus at L’Auberge and Jacques’ Brasserie. If you haven’t enjoyed our fresh garden produce yet this year, there is still time.

Please join us Thursday, November 2nd at 6:30pm at L’Auberge Chez François as we host a dinner featuring the wines of famous winemaker Paul Hobbs. Dubbed “the Steve Jobs of Wine” by Forbes, the exacting Hobbs has worked with producers such as Robert Mondavi, Simi Winery and Peter Michael. We will be welcoming Charlie Plummer, National Sales Director for Paul Hobbs, to present a range of stunning wines, including several single-vineyard designates, and Chef Jacques has designed an enticing tasting menu to complement them.

He entered the world of jazz as a protégé of Sir Roland Hanna and toured the globe many times over with the U.S. Airforce Airmen of Note. He is widely respected for his harmonic sophistication, superb command of the piano, and a broad stylistic palette. Au Revoir, Monsieur Georges
This month we recognize our long-time dining room manager and host, Georges Torchio. He began working at L’Auberge Chez François in 2001 and provided exceptional service to our guests and co-workers alike. He was always willing to help and made every customer feel as though they were a guest in his own home. In addition to his regular duties, Georges serenaded our guests every Bastille Day with the French national anthem, a true patriot for his home country. We will greatly miss Monsieur Georges and we wish him all the best for his well deserved retirement!

September 2017 Newsletter

Greetings from Chef Jacques
We’ve had a lovely season serving al fresco on the terrace and I predict a few more weeks of excellent outdoor dining (a chef’s weather predictions are always more accurate than the weatherman’s). Summer produce will remain with us for several more weeks as well. I’m still making my popular corn royale and our famous tomato salad from the garden. If you haven’t yet made it out to dine on the terrace during these warmer months, there is still time for a summeresque meal outside.

Looking to October, we have an exciting line-up of special events planned for you. We’re hosting our second Full Moon Party co-hosted with Michel Veniat and Charles Ducker from Domaine Louis Latour, a brunch featuring fall produce from the garden, and a special Chef’s Table dinner with Wines of Substance from Washington State. I’m also very excited about our evening of tasting the Burgundy wines of the Boisset Collection on October 19. We’ll be sampling Premier Cru and Grand Cru wines plus several others from the Boisset Collection over the course of a sumptuous evening of delicious food and wine. If you’re a lover of Burgundy wines like me then this event is not to be missed.

Full Moon Garden Party with Domaine Louis Latour Wines
Please join Chef Jacques and the team at L’Auberge Chez Franҫois on Thursday, October 5, 2017 at 6:30pm for our second full moon fête on our outdoor terrace (weather permitting). We are also thrilled to feature the wines of Domaine Louis Latour with special guests Michel Veniat and Charles Ducker. Wine and dine on Chef Jacques’ specially-created menu as we toast the moon’s fire, abundance, power and vitality. Those intrepid enough can join Chef Jacques to conclude the evening by howling at the moon, the chef’s tradition to ensure a bountiful harvesting season.

Formerly known as K Vintners and Charles Smith Wines, the collection was launched in Walla Walla, Washington by self-taught winemaker, Charles Smith. K Vintners is the largest independent and winemaker-owned winery in Washington state. Boisset Wine Dinner and Soirée
